Slow Cooker Tortellini Soup

This tortellini soup recipe is so easy to make, not to mention that it conveniently cooks up in the crockpot. It can even be made ahead as a freezer meal. This is hearty enough for a complete dinner.

You can customize and change up this recipe by adding different vegetable combinations. Start by using vegetables that you know your family likes, which consequently allows you to change it up after they are in love with this soup! clear bag of broth and vegetables and a bowl of soup with tortellini and vegetables


This classic Italian soup is so filling that it can feed our entire family of 9 especially if I serve it with buns or garlic bread.

Tortellini Soup Recipe:

  • 1 onion, chopped
  • 900 mL of chicken broth, vegetable broth or homemade stock
  • 700 mL jar pasta sauce
  • 3 cloves of minced garlic
  • 3 tsp. Italian seasoning
  • 1/2 tsp chili flakes
  • 2 cups water
  • 3 cups frozen mixed veggies (I use an Italian blend that has carrots, cauliflower, zucchini, Romano beans, lima beans, and red pepper, but any combination of mixed vegetables will do.)

For day of cooking:

  • 4-5 cups of fresh cheese tortellini

Assembly instructions:

  1. Put all the ingredients except the tortellini in a large resealable freezer bag. Remove the excess air, seal, and freeze. 
  2. If desired, you can also freeze the tortellini in a separate bag.

Cooking instructions:

  1. Thaw. Add the contents of your freezer bag to the slow cooker and cook on low for 4 to 6 hours. 
  2. 15 minutes before serving, stir in the tortellini.
  3. If desired, top each bowl with shredded Parmesan cheese and red pepper flakes.

Pro tips:

  • Freeze the soup without the water and broth to create a much thinner bag. This will take up less space in the freezer. Just be sure to add a note on the bag to remind you to add them on the day of cooking!
  • Tortellini freezes beautifully. When freezing your bag of soup, you can staple the bag of tortellini to your bag to keep them together. Be sure to staple above the seal so that you don’t put a hole in the bag!

What to serve with tortellini soup?

The tortellini makes this so hearty and you already have vegetables and your starch, so this soup can be served on its own, but if you need to stretch it to feed a crowd, you can serve it with buns, garlic bread, or a side salad.bowl with red soup with tortellini pasta and vegetables in it

Tortellini Soup Variations

  • Change the flavors of this soup each time you make it simply by using a different blend of frozen vegetables.
  • Add extra protein by adding cooked, cubed or shredded chicken.
  • Mini meatballs are a lovely addition.
