I've found that with the one-pot dishes, it seems to depend on the type of GF pasta you use. Some kinds don't require tweaking the recipes while others do. Depends on the recipe too. I know this answer isn't much help except to say that I'm still experimenting when it comes to one-pot and GF but they can work.

Thanks for all these links.

One question: for GF pasta, have you found that (in general) these recipes still work to cook everything together at once, or would you suggest draining and rinsing the cooked pasta before adding everything else? These all look so good, but I (and I would imagine you would as well) know from experience that GF pasta is often starchier (sometimes a lot more so) than the regular, and so I am not sure how that would make the dish turn out.

Looking for a great and easy, delicious dish that I can make with whatever's on hand.

Thanks,
R
