Mini Pita Pizzas

Mini pita pizzas are one of the kids’ favourite lunches. They are also my favourite supper to make when my husband is out of town and it’s just the kids and I.

They love that they can make their own any way they like and I love that they are healthy and that it’s a fast meal to make. There are also very few dishes to wash, which is a bonus!

Mini Pita Pizzas - kids can assemble their own. Makes a great easy lunch or a fun birthday party meal.I use a muffin tin tray to put the toppings in. It’s great to separate everything and creates one dish to wash instead of dirtying many bowls.

Mini Pita Pizzas

For pizza sauce, I take one 5.5 oz. can of tomato paste, scoop in into a bowl, add some water to get it to the consistency I want and stir in some pizza seasoning. You can also use purchased pizza sauce if you would prefer.

Our favourite toppings are:

  • pepperoni
  • pineapple
  • spinach
  • black olives
  • purple onions
  • jalapeños
  • green peppers
  • marble cheese
  • mozza cheese

For the pizza bases, I use mini pitas. These also work with English Muffins or full sized pitas as bases. The kids spread them with pizza sauce and then add whatever toppings and cheese that they want.

Some of them like to get creative and make faces with the food or layer toppings with cheese over and over.

kids making mini pita pizzasFor our son who is gluten free, I use corn tortillas or frozen gluten free pizza crusts as the base.

By allowing the kids to make their own and offering healthy toppings, it makes it fun for them and encourages them to make good food choices.

Mini pita pizzas make a great do-it-yourself station at birthday parties.

Mini Pita PizzasThe other great thing about putting the toppings in a muffin tin tray is that it’s portable. On the day these pictures were taken, I actually filled the tray at home and brought it over to my neighbour’s where our kids enjoyed making the pizzas and we enjoyed visiting!

Other topping suggestions:

  • ham
  • sausage
  • mushrooms
  • tomatoes
  • banana peppers
  • bacon
  • roasted red peppers
  • goat cheese
  • feta cheese

Bake at 350° for 10-15 minutes, until cheese is melted.
