This is the first meal I ever learned to make. In fact, when I got married, this Mom’s Monday Macaroni recipe and a veggie pizza appetizer were the only things I knew how to make! My poor husband was a very good sport. To this day, he still thinks of this as one of his favourites! I think it’s probably just sentimental familiarity.
There is some discrepancy as to the origins of this recipe. I have a vague recollection that it either came from my Auntie Judy or my Gramma.
Mom’s Monday Macaroni Recipe:
- 1 Tablespoon butter
- 1/2 cup chopped onion
Sauté onion in butter and transfer to a casserole dish. Add:
- 1 1/2 cups UNCOOKED macaroni noodles
- 1 cup shredded cheddar cheese
- 19 oz. can of diced tomatoes
- 1 cup water
- pepper, oregano, basil, crushed red pepper flakes (optional)
Stir. Cover and bake at 350° for 65 minutes.
Wow, this is super easy and sounds and looks yummy! Thanks for linking up to Good Tastes Tuesday!
Thank you so much for this recipe. I am making this on Thursday. 🙂
If you get a chance, let me know how it turned out!
Easy dinner dishes are always helpful, aren’t they? Thanks for sharing!
My mom used to make a dish similar to this. We called it macaroni and tomatoes. She wood boil the macaroni and then tear up slices of good ole american cheese slices and add them to the drained pasta along with a can of peeled, diced tomatoes and let it heat through and melt the cheese. She would usually serve it with fried salmon patties. Hmmm….brings back some yummy memories! Thanks for sharing.
